I was wondering why Microsoft weren’t fighting back against this encroachment into their market. Turns out they were trying to compete, with a product called “Windows 10 S”. Seems that effort has been just about abandoned, with “Windows 10 S” now being just a mode you can configure into regular Windows 10.
