Install tightvnc ( http://www.tightvnc.com/ ) on the Windows box, vinagre on the Ubuntu box and Bob's your uncle! It seems to work quite well.
that's the easy part. Finding your way around NAT and dynamic IP addresses makes things quite a lot harder.
